If you want to prepare scallops with a delicate and particular taste, use this recipe for scallops with saffron. The other night I did not know how to prepare some slices of pork loin that I had in the fridge and leafing through one of my Italian recipe books I noticed this recipe for saffron escalopes. I had the pork loin, I also had saffron and so ... here's my latest recipe :)
How to make saffron escalopes
Melt the saffron in the white wine and let it rest for about ten minutes.
Meanwhile, fry the butter and oil in a non-stick pan and lay the slices of meat, beaten and floured, and brown for 5 minutes on each side.
Add salt, pepper and sprinkle the escalopes with the saffron liquid until they are covered.
Allow the sauce obtained by turning the escalopes to reduce to flavor on both sides.
Serve the saffron escalopes on a serving dish sprinkling them with the saffron sauce.
