Snack: toasted black bread, greased with olive oil, covered with squares of telemea with greens and decorated with pieces of cucumber, tomato or pepper.
Main course: eggplant dish with pumpkin, mashed tomatoes, garlic, thyme and dill.
(Recipe: cut the eggplant and zucchini into cubes, put them on the fire in a little oil and let them drop. Add the canned mashed tomatoes, grate the garlic in the food and add the thyme, dill, salt and pepper. When you have Tired of waiting in that great smell, put out the fire and serve with the pieces of bread straight from the pot :)
Humus. With baked pumpkin, with beets, with baked vegetables or simply with broken stick in pieces, sprinkled with olive oil and baked in the oven: D
Yuppi: D my recipe for fav. summer vegan is: eggplant in Vietnamese style! I tried them in Vietnam for 2 years, and since then summer is a must have at home.
Wash the eggplant, make a few holes in it with a fork, then put it on the grill. Bake them, then peel them. We leave the tail so we can move it easier. We cut the eggplant in 2, lengthwise. Then prepare a sauce from a few tablespoons of oil (which you like .. I use olives), 2 cloves of garlic, green onions, salt (or if you like the taste a teaspoon of fish sauce, soy sauce can replace salt). Pour this sauce over the eggplant and serve hot! The book you put up with it seems to me to be a kind of vegetarian Bible. And I'm really part of the congregation. It's clear that all sorts of combinations come to mind to turn your back on you. I try to keep my decency, to be honest and not get delirious.
Things are like this:
1st place & # 8211 FALAFEL: respect the classic recipe & ndash chickpeas left to soak overnight, sesame, parsley, 2 tablespoons flour, a little baking powder, onion, garlic, olive oil, spices. My contribution refers to the sunflower seeds that I leave to soak like chickpeas. The outcome? Clean delicacy: tasty and fluffy meatballs.
Second place & ndash WALNUT DRUM: a mixture of ground walnuts, boiled potatoes and onions in equal proportions. To these are added a slice of bread soaked in water, an egg (or oatmeal), greens, spices. It deserves a try!!
Third place & ndash MUSHROOMS PIE: a classic tart dough (butter, flour & ndash twice the amount of butter, an egg, a pinch of salt, some water) lined with champignon mushrooms hardened with onions and garlic and various types of cheese not I like the lack of a little mold. If I also have a sprig of leek to grind and throw over the tart, it's perfect!

There are many, many vegetarian recipes that I love, but I think my favorite is BROCCOLI SALAD. It is prepared in 2 strokes and 3 movements like this:
Take broccoli, wash and separate into smaller bunches, add sliced red onions and raisins. Separately, make a dressing of 200 ml of yogurt, 2 tablespoons of honey and a tablespoon of fruit vinegar, which is poured on top. Flax or sunflower seeds are sprinkled over the salad.

I like vegetable tarts the most. Make a dough with which the hyena dish is lined, add not very finely chopped vegetables, mixed with spices, cover with vegetable cream mixed with beaten eggs and put in the oven.
My favorite vegetarian recipe is:
Tian vegetable-an accordion consisting of slices of pumpkin, eggplant, tomatoes, peppers, potatoes, put on pieces of onion and garlic soaked in olive oil. Season with salt, pepper and thyme sprigs. At the end, sprinkle with Parmesan cheese and leave for another 5 minutes in the oven to brown.

I think the simplest vegetarian recipe (I'm always against the clock) but also one of the tastiest (for my gourmet) is the one with zucchini fried with tomatoes, a little hot pepper and, finally, a little mozzarella with basil & # 8230 Yummy! There is also an oven version with eggs and sour cream, but for me too much :)
Although in all my 27 years I have loved pork and its derivatives and I have developed a more than efficient relationship, about 6 months ago I tasted for the first time an eggplant salad prepared in Lebanese style. And I loved it. Then I had my mother make it for me in Romanian style (which until then was bleah for me) and since then I haven't had enough of eggplant salad. I prefer it with the Mega sesame baguette or with fresh bread from Auchan. As everyone knows that I don't kill myself with vegetables, bets are already being made for the age when I will taste it and I will also like a tomato, a zucchini or a pepper.
Apart from the recently discovered eggplant salad, I really like the hummus I made after a recipe by Adi Hadean. A can of chickpeas, 2 tablespoons of semi-top of tahini paste, about 3-4-5 cloves of garlic (the more, the merrier) 2 tablespoons of healthy yogurt of sheep and goat or Greek with 10% fat, a little oil of olives and juice of half a lemon or more (everything is ochiometric to me). All blended, add sumac or paprika and seed kernels instead of pine buds. I would eat until I exploded.
Eggplant salad anytime and at any time (necessarily with fresh breadcrumbs), pea meal with dill, baked pepper salad and hummus. Sometimes a bean stew goes.
My favorite dishes are peppers stuffed with rice and mushrooms, with tomato sauce on top and put in the oven, but also eggplant in the oven, with tomato sauce and mozzarella.

I really like lentil meatballs. Boiled and mashed lentils are mixed with grated carrot and finely chopped onion. Add a little oil and oriental spices: cumin seeds and ground coriander seeds, salt and pepper. Mix everything and then shape the meatballs. Put in the oven and you're done!

Super book, to have it. My veggie recipe that I want to share is discovered by chance with ingredients found one day in the fridge. A well-baked and finely chopped avocado, a medium diced tomato, a chopped salad, a large bunch of finely chopped parsley and half a small lemon squeezed over. It is delicious and to a certain extent resembles guacamole.

I made a dish with an Asian scent that I adore: salt in curry sauce. I put in the pan (in a little sesame oil) mustard seeds and cumin until they start to poop, then garlic, 3.4 cardamom pods, a star anise, a few chili flakes. I add strips of pikeperch, coconut milk and curry powder. Keep on the fire for a few minutes until the fish penetrates. It is a creamy, colorful, fragrant and tasty food.
